Up to 2 700 meals are produced daily in the Airbus staff catering facility. Two restaurants and three shifts make high demands on the kitchen and equipment. Fresh ingredients, five different dishes every day and a largely homemade production require high-performance, reliable kitchen technology. By choosing MKN, Airbus relies on European equipment that combines quality, robust workmanship and intuitive operation with sustainability.
The Airbus catering facility operates on a grand scale. Up to 2 700 meals are served daily across two restaurants and three shifts. A total of 54 people work in the team. Twenty-two of these work directly in the kitchen, backed by a support team of twenty-nine managing tasks such as cash desk operations.
Standards are high: Five different dishes are freshly prepared every day, largely homemade. While recipes need to be customizable, quality must remain consistent even during large-scale production and over several hours. Whether a guest arrives at 11.30 am or 2.00 pm, they should expect the identical premium quality and perfect level of doneness.
At the same time, the focus on sustainability and resource efficiency has sharpened. The objective was to achieve further reductions in food waste, electricity consumption, plastic waste and use of cleaning chemicals.
When upgrading its catering facilities, Airbus attached great importance to European-engineered equipment. They were looking for durable quality, robust workmanship and technology to streamline kitchen workflows, while ensuring effortless maintenance and long-term serviceability.
MKN impressed in particular through its material quality and the practice-oriented design of its appliances. The FlexiChef®'s standout feature is its fully automated, chemical-free cleaning system. When it came to combi steamers, maximum ease of operation and cleaning were top priorities.
With precise temperature control, kitchen teams can achieve consistently high-quality cooking results, even when producing large quantites for long service hours.
The MasterLine meets the demands of intensive daily operations. It runs three times a day, five days a week, effortlessly preparing thousands of steaks every week.
Energy efficiency was another key focus. The FlexiChefs require only 25 kW each instead of 45 kW. With three appliances, this significantly reduces total power demand – making a major contribution to Airbus's environmental and efficiency goals.
Sustainability does not end with kitchen equipment. Free water dispensers help to save around 10 000 plastic bottles annually. At the same time, the kitchen collaborates with a local farm and and consciously relies on regional and organic ingredients, for example in its homemade organic rice pudding.
With MKN kitchen technology, Airbus combines high volume production with consistent quality and a steadfast commitment to sustainability. Thanks to precision, temperature controlled cooking technology, quality remains constant throughout the entire service period - from the first guest to the last.
The reduced power consumption of the FlexiChef® supports Airbus's environmental goals as does the minimal use of cleaning chemicals. Supplementary measures such as water dispensers preventing the waste of around 10 000 plastic bottles, more organic products and cooperation with regional partners amplify this support.
Food waste also plays a central role. At around 100 g of waste per person, the level is already kept exceptionally low. The result is a kitchen designed to reliably manage large volumes and conserve resources while upholding the highest standards of genuine homemade culinary craftsmanship.
