The MKN chefs' team has developed a process in which a batch in a 475 l cooking kettle is ready in 1.45 hours only. Over 60 minutes less compared to using conventional methods (tilting bratt pan)!

The MKN multifunctional cooking kettle lets you save instructions in separate folders and also as favourites, if required.

Individual information notes for each cooking process
If necessary, you can add useful notes to all processes, e.g. "Add meat"“. A signal sounds at the right time and details appear on the display. The cooking programme resumes when you have acknowledged this step.
MULTIFUNCTIONAL COOKING KETTLE
Rapid chilling of food is extremely important in Cook & Chill production. Hygiene regulations are automatically observed and archived (HACCP). Processes are safe, standardized and become more effective.
Rapid chilling is based on the largest possible temperature difference between the cooked food and cooling agent. A practical, effective and safe solution is ice water cooling with a temperature of around 0 °C.
This system efficiently integrates the multifunctional cooking kettle into the recirculation of ice water into a customer's ice bank. The latter can even be situated on another floor in the building.
The HACCP requirements can be adhered to because the ice water not only circulates on the interior surface of the cooking kettle, but also in the vertical stirring axis of the agitator. So, around 10 % more surface area is available for cooling or heating in the kettle.
