Curtains up for creative theatre cuisine

Theatre and musical goers in St. Gallen's impressive, neo-baroque concert hall can eat their way to a good mood ahead of the cultural programme in the in-house Concerto restaurant. Whether it be table d'hote, lunch or dinner, head chef Gabriel Frick and his team in the restaurant, theatre canteen and cultural centre have to constantly rise to the occasion from 9 am to 11 pm seven days a week. This is only possible when kitchen processes run cost-effectively.

 

The experienced chef uses fresh, mainly regional ingredients and trusts in MKN's multifunctional equipment. The room sizes in the listed historic building dictate the scope of the kitchen equipment in use. This means a large central kitchen in the basement and a tiny à la carte kitchen with an open view of the restaurant and winter garden. Space in the 10 m² à la carte kitchen is fairly confined but thanks to precise planning and asynchronous preparation with MKN functional appliances, the kitchen team can stay relaxed even during the busiest lunch or dinner rush.
